Herby Roast Gammon

I had a sudden thought when I was planning to cook my Gammon joint this week. I thought that it would go nicely with some butter and herbs and so I gave it a go. I can tell you, it is very nice. Other people have probably had the same idea, but I just thought it was new to me, so it might be new to you too!

Herby Roast Gammon


Ingredients.


Ingredients: –
1 Gammon Joint
Water to boil Gammon in x 2
20g Butter
1 tbsp mix of Herbs (Basil, Oregano, Rosemary, Thyme, Garlic)

Method.


1. Put the Gammon into a large pan and cover with water. Bring this to the boil.
2. Pour this first lot of water away and cover the gammon with a fresh lot of water.
3. Bring this second lot of water to the boil and then simmer for 30 minutes.
4. While this is simmering preheat the oven to 1800C
5. Take the gammon out of the water and put it in an oven proof dish. (Keep this lot of water to make soup with!)
6. Baste the gammon with the butter and sprinkle the herbs over the joint.
7. Cook the gammon for 30 – 40 minutes and continue to baste it with the juices during the cooking.

The first lot of water is discarded because it would be too salty from the gammon but the second lot of water is fantastic for making a gammon soup. I will do this recipe for next week. The gammon itself is delicious with the buttery herby marinade. You can use dried or fresh herbs – I used dry herbs this time but will give it a go with fresh herbs next time I cook some gammon. Well worth a try if you like gammon.
