My Enormous Globe Courgette

I have been growing Globe Courgettes in the garden and they have been doing well. What I didn’t realise was that one of them was growing much bigger than the rest and was nicely hidden under the leaves. So, when I found it, it was about 1 ½ kg! What do you do with a courgette that big? Well, you can make Courgette Cake!!! This particular courgette went to make a stir fry, a cake and then was a vegetable serving in the next meal.

Courgette and Walnut Cake


Ingredients.


375 g Grated Courgette
100 g Roughly Chopped Walnuts
2 eggs
125 mls Vegetable Oil
100 g Soft Brown Sugar
1 tsp Vanilla Extract
300 g Self Raising Flour
2 tsp Cinnamon
¼ tsp Nutmeg
140 g Sultanas

Method.


1. Grease and line a cake tin with baking parchment
2. Heat the oven to 180c / Gas 4
3. Whisk the egg, oil and sugar in a large bowl for about 3 minutes.
4. Mix in the grated courgette and vanilla extract.
4. In a separate bowl combine the remaining ingredients.
5. Then combine the wet and dry ingredients and mix well.
6. Put into the lined cake tin and bake in the oven for about 1 hour.

I am not really a cake lover but this is a lovely moist cake and the cinnamon and nutmeg add a lovely spicy flavour.
